1 tablespoon of coconut oil
2 large eggs
Heat the oil in a nonstick pan over low medium heat
Crack an egg and slowly add it to the pan. Repeat with the other egg
Season to taste with salt and black pepper
cook for 2 minutes or until the egg whites turns opaque. Cover if necessary to help the egg cook.
Use spatula around the edges of the egg to make sure it doesn’t stick under the pan.
